I guess I missed the boat on a February recap (see January here), but today I'm bringing you my favorite things from the month of March. It's always good to reflect back on your month and focus on the highlights, so here we go!
Yoga, farmers' market, vegan brunch, shopping, batch cooking, and a local ingredient full dinner? I'm really not sure what could have been better.
Arkansas was cold and icy this March, and this soup helped warm us up. Bonus cornbread cookies from Veganomicon!
March was also the month of burritos, and first up were these BBQ Jackfruit ones. The cilantro cashew cream and the bbq sauce makes this a really satisfying dinner.
Definitely the most popular recipe on the blog this month were these freezer burritos. I plan on doing more in the future, because they were the easiest dinners we had all month.
Maybe the wackiest thing I concocted was this thin mint smoothie, but it's very tasty! I still have a big box in the freezer, so I need to come up with more tasty treats. Banana soft serve with thin mint crumble, anyone?
In spite of all the cookie smoothies, I really did try to get a good helping of greens into almost ever meal this month. You can check out all the ways in the post above.
Best restaurant meal went to this decadent salad from Local Lime. I mean, seriously? That much avocado and papaya can never be a bad thing.
