Awhile back, I came across this recipe on pinterest, and I was so excited. It basically outlined how easy it is to make a quick and healthy cup of noodles at your desk.
You pile in your favorite ingredients, pour in hot water, wait 2 minutes, and boom! Lunch. For this one, I put in the following:
- 1 tsp miso paste
- 1/4 cup chopped baked tofu
- 1/4 cup chopped mushrooms
- 1 tbs shredded carrots
- a few generous squirts of sriracha
- 1/2 cup cooked noodles
- a few sprigs of spinach
- 2 tbs chopped green onion
- 1/4 tsp salt
You can use rice noodles, but we had some leftover spaghetti from Pasta Night, so I used that instead. Either would work, though.
I'm sure I'll be testing out many more flavor combinations. This is such a quick and yummy lunch!
