Goodbye 2013

Whoops, took a little unintentional blogging break there the past few days.  I was busy cleaning and things like that.  There was also a lot of Bodhi cuddling.

I have some posts in the works on an amazing Fire Station Lunch from Saturday and some Lentil Daal Cooking on Sunday, but today I wanted to give you a recap on the last few days of the year.

Josh had to go back to work on Monday, so I got to stay at home and clean.  I put on some Savage Lovecast and got to work on the house!  I paused periodically to eat the daal and home made bread from Sunday (I promise, recipe is coming).

Breakfast and lunch were both kind of carb (and earth balance) heavy, so I went with a salad that night.  I also made it out to Kroger and bought a MASSIVE amount of fresh vegetables.  I just grabbed whatever looked good, worrying with what to make of it later.  This isn't my usual way of shopping, so we'll see how that goes.

There was also a lot of Bodhi cuddling.

Tuesday, I had more daal and did more cleaning, plus I ran errands all morning.  Then, I went for a 2 mile run and decided to rake the front lawn.  It was beautiful outside, and it felt good to get out in the sun.

We had some great friends come in from out of town for New Years Eve, plus my sister, her boyfriend and one of Josh's coworkers came over too, so I made up a ton of snacks.

I made a black eye pea salad (black eye peas, green pepper, green onions, cilantro and Italian dressing), tempeh spring rolls with a peanut sauce and tons of veggies, chips and salsa.  There were non-vegan items as well, as none of my friends are even vegetarian.  It was a good party!  We played balderdash and tried to keep our eyes open til midnight.

We woke up the next morning and I made up a big brunch for everyone.  We had vegan latkes (I just subbed chia eggs for real eggs and made up the recipe based on what I found on pinterest) that had potatoes, zucchini, carrots and cilantro inside.  I got to use my new box grater my parents gave me for Christmas.  Everyone said they were amazing.  I thought I was making way too many, but all but 2 got eaten.  I also made up the rest of the bbq tempeh, and these vegan biscuits from Minimalist Baker.

Rough Latkes Recipe

2 small yellow onions, peeled
6 small yukon gold potatoes, peeled
3 zucchini
1/2 cup shredded carrots
3 tbs ground chia seeds
9 tbs water
1/2 c all purpose flour
1 tablespoon baking powder
oil for frying
salt and pepper to taste

  • Shred the onions, potatoes and zucchini with a box grater.  Put inside a strainer and press with a towel until you release most of the water.
  • Heat oil in large pan on medium/high heat.  Use enough oil to cover half the latkes.  (Alternately, bake them in the oven at 400 degrees F until they get crispy)
  • In a large bowl, mix the chia seeds and water.  Let sit for 2 minutes.
  • Add the shredded veggies to the bowl. 
  • Add carrots.
  • Mix everything together.
  • Add flour and baking soda.
  • Toss ingredients, add more flour if seems too wet.
  • Add salt and pepper.
  • Once oil is heated up, drop small patties and let cook until you see the edges on the bottom turn a light brown.  Flip and cook for same amount of time.
  • Let drain on a paper bag, then keep warm in the oven at 200 degrees F.

We served the latkes with sriracha mayo, which is just nayonaise whipped with sriracha.  Yum!  The brunch went over really well, and all the non-vegetarians loved the vegan eats.

I spent the rest of the day sipping champagne, eating leftovers and napping.  It was a good day.  I'm definitely ready to start my Arbonne Detox though.  I also ordered a nutribullet, so I can make smoothies and veggie drinks at work.  Has anyone tried these?

I'm not making New Years Resolutions, I'm just going to resolve to be better in 2014.  I started this blog last year, and it has been a ton of fun and eye opening for me.  Thank you for reading and following along in my journey.  I had a lot of health issues that derailed my progress, but I'm almost out of that now.  I want to be the healthiest, happiest person I can be, and I need to remember to eat clean and move my body.  I hope you all had a Happy New Year, and I look forward to our journey toward health together in 2014!
