Sweet Potato Eggplant Chili

It's been an incredibly busy weekend, but I had time yesterday to do a bit of cooking.  As promised, I have a fall recipe for you!

Sweet Potato Eggplant Chili


2 tbs olive oil
1 tbs maple syrup
2 medium sized sweet potatoes, skinned and cubed
2 medium sized eggplants, skinned and cubed
1 large sweet onion, small chopped
4 garlic cloves, chopped
spice blend:
     1 tbs cumin
    1 tbs paprika
    1 tsp salt
    1 tsp cumin
    1 tbs dried thyme
    1 tsp dried oregano
    1 tsp dried rosemary
    a few generous cracks of pepper
2 cans roasted diced tomatoes
6 cups low sodium vegetable stock
2 dark pumpkin beers
1/2 cup pumpkin puree
1 can kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
2 green peppers, chopped


  • Prepare all the raw vegetables before you begin.  It makes it easier.
  • Heat pot on medium/high.
  • Add oil, throw in onions.
  • Add maple syrup, cook down onions until translucent. 
  • Add garlic, cook down for 5 minutes.
  • Add spice mix, cook for 1 minute.
  • De-glaze pan with 1/2 can tomatoes.
  • Add eggplant, cook down for 15 minutes or until soft.
  • Add sweet potato, cook for 2 minutes.
  • Add beer and 4 cups vegetable stock.  Heat to boil, reduce to simmer, add cover and cook for 30 minutes, or until sweet potato is soft.
  • Remove cover, add beans, pumpkin purree, and green pepper.  Add remaining vegetable stock.
  • Cook down with cover off for 30 minutes.  
  • The spice level will be low, so if you want to add hot peppers, go right ahead!
  • Take off heat and let cool down on the stove.  Reheat before serving.

The cook time took a few hours, but it was fun.  

I love the smell of chili in the kitchen.  It was amazing.  This makes a TON of chili, so be prepared for leftovers.

While making chili, I roasted peppers for some Veganomicon cornbread.  It was excellent with the chili.
