Mellow Mushroom Salad Recreation

I am overwhelmed and excited about the traffic on here lately.  Today we reached over 10,000 views, and I've had about 1000 a day for the past few days.  Wooo vacation recipes!

On my traveling as a vegan post, I showed you a salad I had at Mellow Mushroom that was AMAZING.  I have been thinking about it all week.  I think the biggest draw was the shredded daiya cheese on top.  More on that in a bit.

I have finally found a protein powder that I really, so I'm sure you'll be seeing a lot of it for the next few weeks.  I tend to find something I really like to eat, and then I eat it every day.  This is the same protein as the last few posts, and it's really tasty.  Plus, it has 20 grams of protein, a ton of B12, and it's low in carbs.

As you can see, I'm also on a bit of a coffee kick.  I am usually a green-tea-er, but ever since vacation, I have been craving my Americanos.  My wallet and tummy are begging me to stop, though.  I snacked on olives in the morning, and for lunch everyone wanted to go to Forbidden Garden.

I've been trying to get different things lately, and I was feeling pretty hungry, so I went with their vegetable rice noodles.  I asked them to add tofu and make sure they don't put any egg in it, which I don't think they do anyway.

This was very tasty.  Unfortunately for my stomach, I ate all of it.  I wasn't really hungry again until much later, when I started dreaming about my daiya covered salad.

Easy Peasy Tempeh Salad

Ingredients:

2 cups spinach
2 baby sweet peppers, chopped
1/4 block tempeh, cubed
5 green olives
1 stalk celery
1 stalk green onion
1/4 cup shredded vegan cheese
2 tbs goddess dressing
sriracha if you're nasty
pepper and sesame seeds to top

It was a fresh and simple dinner that really hit the spot!

Life is feeling pretty good lately.  If you want to read more on that, you can check out my post from last night.  Stay tuned this weekend for a cookout with friends, and hopefully a jicama salad!
