Double Recipe! Beyond Chicken Salad AND Taco Night!

Today was a good day for some cooking!  I got up and headed to the Argenta Farmer's Market to snag some strawberries, and I was happy to find dino kale, some beautiful lettuce, zucchini and red onions.  The strawberries were BEAUTIFUL, so I chopped them up and put them in a bowl for later.  I debated on putting sugar on them so they would release some juice, but in the end, I left them alone.

I got back from the market and broke out the Beyond Chicken.  I popped a piece in my mouth, and WOW!  Now, it may have been over 5 years since I've eaten a piece of chicken, but this stuff is BY FAR the best meat replacement I have tasted.  I used the grilled version for this chicken salad.  I broke it into little piece, chopped up red onion, 2 stalks of celery, and added them all together.  I mixed this with 3 spoonfuls of Earth Balance Mayo (the only fake mayo I really like), spicy relish, thyme, salt and pepper, and onion powder.

Beyond Chicken Salad

1 package Beyond Chicken, grilled
3 spoonfuls Earth Balance Mayo
2 stalks celery
1/3 c red onion
2 spoonfuls spicy relish
1 teaspoon dried thyme
1 teaspoon garlic powder
salt and pepper

HOLY CRAP!  This was so good.  I took some of the big lettuce leaves from the farmers market and spooned the salad in.  I topped it with some hot sauce and broccoli straws.  It made a really excellent lunch. I even had it on crackers as an afternoon snack.  This made up a good 4 or 5 pretty good size servings.

After studying all afternoon, Josh and I decided it was TACO NIGHT!  This is our favorite dinner, and every time we do it, I try to make a different variation.  Tonight, I was feeling about going in the raw direction, so I opted for walnut meat.  I thought about using the food processor, but in the end I went for the vita-mix.  This may have been the wrong idea, because it came out as a walnut pate instead.  Once I tasted it, I was NOT disappointed.  It was amazing.

Walnut Pate Tacos

1 1/2 cup walnuts
2 tablespoons of green chilis
2 tablspoons of nutritional yeast
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon smoked paprika
salt and pepper
1/2 can hot rotelle, undrained
2 tablespoons salsa verde
1/4 cup chopped jalepenos

I broke out the lettuce leaves again, and this time, I spooned the walnut mix on, then placed some avocado, hot rotelle and broccoli straws.  SO GOOD!  I like making light tacos so I can eat more chips.

I think these would be really good as party food as well.  Also, now I have a huge amount of taco meat to eat throughout the week.  Very economical.

  1. That looks crazy good! We also made a Beyond Meat chicken salad yesterday and it was tasty when we pulled those Beyond Meat chicken apart. I find that breaking them apart (like pulled apart "chicken") makes it more appetizing and easily chewable. Thank you for sharing a yummy recipe especially with the walnut pate. Who doesn't hate walnuts?!
