Vegan Kale and Alfredo Pizza

That delicious, decadent, and cheese covered pizza is vegan, you guys.  I was pretty proud of myself, after just kind of winging it for a pizza party we threw for the Super Bowl.  It was SO good.

We made 5 pizzas in total, for 7 people, and there were two star vegan ones.  I made my regular Curry Sweet Potato and Eggplant Pizza, which I've made several times.  For the other one, I wanted to try something different.

So, I started thinking about what kind of pizza I used to like before going vegan, and an alfredo pizza came to mind.  I had some leftover frozen kale from another dish, so I knew I was halfway there.  I grabbed some Kroger vegan chicken shreds in the frozen section (which I am OBSESSED with), made up some cashew cream, mixed in the kale, threw on some Daiya and jalapenos, and dinner was served.

Of course, we used store bought pizza crusts, because we're lazy and afraid of yeast.  One day I will master how to truly make a good pizza crust.  For now, these work well.

Easy Vegan Lunch Slaw

I have been crushing lunches at work lately!  On the side of sweet potato tempeh wraps, chickpea sandwiches, or stuffed sweet potatoes, I always include this slaw.  This is the perfect thing to whip up in 10 minutes on a Sunday, and you've got lunch all week.

Easy Vegan Lunch Slaw


  • 1 package coleslaw mix
  • 1 package frozen edemame beans, shelled
  • 1 red bell pepper, diced
  • 4 clementines, peeled
  • 2 stalks green onion, chopped
  • 1/4 cup chopped cilantro
  • 1/2 cup carrots, cut into strips
  • dressing of your choice

Assemble all chopped ingredients, excluding dressing.
When you get ready to head to work, drizzle your favorite dressing on your salad.
By lunch, the cabbage will have soaked through, and you'll have a great dish.
Option:  if you don't need to trek out to an office, simply add dressing to your lunch portion an hour before you eat.

I have been making this every Sunday for weeks, and I'm still not sick of it.  It's so bright and healthy.  I'll tell you about that amazing sweet potato lunch sometime soon!

Vegan Eats in Eureka Springs

This past weekend, I met up with some lovely ladies for a girls' weekend in Eureka Springs.  It was just a quick overnight trip, but we crammed in lots of yummy eats.

Lunch at Basin Park Hotel

We all arrived in Eureka around noon, and we decided to head to lunch at the Basin Park Hotel.  They have a nice patio, and it was a beautiful day outside.  The streets were fairly crowded, but I was informed by my girlfriends that it was nothing compared to their actual busy times.  Nonetheless, service was incredibly slow.  We leisurely lunched for hours.

Streets in Eureka are pretty much overrun by bikers or hippies.  We asked someone on the street to take our picture, and in return got photobombed by two bikers.

I wouldn't say that the food here was great.  We ordered the hummus plate (ask for feta on the side), which was pretty tasty.  It came with fried pita chips, which were out of this world.  After munching on that, I decided to go for a taco salad, which was a modification of a cheese and chicken filled one.  I had higher expectations, but this was pretty bland.  The veggies were cold, and the salsa wasn't that good.  We did get an order of sweet potato fries that made up for it, though.

Stayed at the Best Western Inn of the Ozarks

We booked a suite at the Best Western Inn of the Ozarks, not really expecting too much.  There are tons of places to stay, from cute bed and breakfasts to huge haunted mansions.  We picked this place because it was affordable and easy to get to.  When we got to the hotel, it looked like your standard motel, and pulling up to our room was a little concerning.  It was in a non-descript stone building off to one side.  When we got in the room, though, we were very pleasantly surprised.  The suite had a huge front room with couches, a table, and a bar.  The back room had two large beds.  It was a very comfy place to spend the afternoon pampering ourselves.

The whole room smelled like nail polish when we were done, but it was fun.

Dinner at Ermilio's Italian Home Cooking

All the girls that were familiar with Eureka said we had to have dinner at Ermilio's.  So, we got pretty and headed out.  We knew there would be a wait, but we really weren't prepared for how long.  So, we put our names on the list and headed upstairs to play Apples to Apples and wait.

There were two gigantic bachelorette parties going on that night, so we ended up waiting about 2 hours.  I feel like it was worth it, though, because the food was amazing.

I ordered the primavera, which game out with huge veggies and chunks of garlic.  It was so tasty and fresh.  The girls loved their dinners, too.

Even though it took forever, and service wasn't great, the food made up for it.

Breakfast at Myrtie Mae's

We got up early and headed to the hotel restaurant for some grub at Myrtie Mae's.  I was really just expecting some toast, which I also got, but they had a veggie hash brown plate that looked amazing!

It was SO good.  The veggies were super tasty, and the salsa was made fresh.

Overall, it was a fun and tasty trip.
