Today's vegan mofo prompt was to make a dish using all seasonal produce! This incredibly simple has only 4 ingredients, is packed with flavor, and makes a great side dish or dessert. I'm talking about watermelon salad.
All summer, we got these incredible, small, seedless watermelon, so I made them into this tasty dish.
- 1 seedless watermelon, cut into small cubes
- 1/2 cup fresh mint leaves, washed then cut in strips
- Juice from 2 limes
- 1/2 tsp salt
Mix everything together and chill for 1 hour. Enjoy!
