VEGAN MOFO: Late Summer Foods
By the end of the summer in Arkansas, there is so much produce to be had. My CSA boxes often look like this, so I like to make a simple pasta dish using some of the ingredients.
I like to cook down tomatoes in olive oil and throw them together with some veggies and a protein. Tonight, it's tempeh and broccoli.
I'll share this pesto recipe later on during vegan mofo. Doesn't that look like a tasty dinner? My simple tempeh recipe is to boil it for 15 minutes, drain, and toss in a hot pan with lemon juice and olive oil. Simple and great!
