VEGAN MOFO: Favorite Cookbook
About 7 and a half years ago, I was newly vegetarian and perusing my campus bookstore. I'd grown up eating meat my whole life, and while I ate a lot of vegetarian means (cheese and red pepper sandwiches, eggplant parm), I didn't really know anything about vegetarian cooking.
So, I eventually found myself in the cookbook section, and this cover stood out...
Vegan with a Vengeance looked fun and interesting, and I bought it. I took it home and started flipping through the easy to follow recipes. I hadn't made up my mind to be vegan at that time, but the seed was planted. The recipe that grabbed me and became a go-to staple in my house was tofu scramble.
Now, for the first several times, I followed the recipe exactly. The spice mix is the real treasure in the recipe. Now, I throw in whatever veggies we have on hand, but I usually stick to the mix.
Tofu scramble is so near and dear to my heart, because it's the first vegan recipe I started sharing with my friends. I'm not sure what they thought when I started this journey (7 years vegan as of September), but once I started cooking recipes like this tofu scramble, they were all on board. Since then, I am happy to see that I've exposed my friends to a lot of things that none of us had ever eaten before.
I usually pair it with some avocado toast, another jewel of the internet. I love scramble for breakfast, but I think it's even more fun to have it at night. Whenever Josh can't decide what sounds good for dinner, we usually end up on scramble night.
