VEGAN MOFO: Basil Pesto
My favorite herb would have to be basil. It's so bright and delicious, and it's perfect for making pesto. We even named our cat Basil.
So, whenever we get a huge pile of basil, I throw it in a food processor with garlic, olive oil, walnuts, salt, and lemon, and BOOM, easy pasta topping.
When I make a huge batch, I freeze some in ice cube trays for later. Use this in a pasta dish like this one.
