VEGAN MOFO: Eating on the Road

I don't always cook in my kitchen, so when I travel, especially for more than a couple days, I really prepare.  Sometimes we're at friends' houses, sometimes we're in a hotel, and sometimes we're out in the woods.  I don't let that keep me from eating delicious, vegan food wherever I go.

Here are a collection of posts I've done on the topic.  A girl can't cook all the time, so I have included some of my favorite dining experiences when I travel as well.

There's no excuse to not eat yummy, vegan food wherever you are.  I want to travel more and eat more amazing things.  I know this is just the tip of amazing cuisine around the world.

VEGAN MOFO: Tacos vs Burritos

We're reaching the end of Vegan Mofo, and today, we have a GIVEAWAY!  More on that in a little bit.  Our prompt today was Tacos vs Burritos, and seriously you guys, how can a girl choose?  If you've been a follower of the blog, you know Josh and I have taco night on all special occasions.  Hell, we had a taco bar at our wedding!  You may also know, though, that we have been working on great recipes for freezer burritos for the past year or so, and that's become the staple lazy dinner in our house.  So, instead of me choosing which one I like better, I've decided to let you choose.

VEGAN MOFO: Basil Pesto

My favorite herb would have to be basil.  It's so bright and delicious, and it's perfect for making pesto.  We even named our cat Basil.

So, whenever we get a huge pile of basil, I throw it in a food processor with garlic, olive oil, walnuts, salt, and lemon, and BOOM, easy pasta topping.

When I make a huge batch, I freeze some in ice cube trays for later.  Use this in a pasta dish like this one.

VEGAN MOFO: A Chill in the Air

Fall is coming, and that means it's time to break out the big pots, start roasting up some garlic, and get the spice mixes together.  Chili, curry, and large soups are one of my favorite things to make in the fall and winter, so here is a list of some of my favorite recipes.

VEGAN MOFO: Tacos with Sherlock

Today's Vegan Mofo prompt is to see what kind of vegan meal a famous person would eat if they were vegan.  I've been binge watching a lot of Sherlock lately, and we won't mention how many times I've already seen the series, but if Mr. Sherlock Holmes (otherwise known as Benedict Cumberbatch) were vegan, I'd imagine he'd deduce that these vegan tacos are delicious.

Now, of course, Sherlock wouldn't eat if he was working.  Slows the digestion, doesn't it.  Once brilliantly solved his case, though, I'd take him out to The Fold for some tasty tacos.

The Fold has two tacos that can be made vegan, but they have tons of sides.  Their food is light and fresh, perfect to keep our Mr. Holmes looking his sleek and sexy self.

VEGAN MOFO: Autumn Eggplant Pizza

Autumn is here!  Well, the temperatures are still way too high for my liking, but I know that it will cool off eventually.  This pizza makes me feel like it's fall, because it's bright and orange and delicious!  Now, I've made this before, but this time, I fried the eggplant!

For Josh's birthday, we had a pizza night, and I knew this pizza would be perfect.  So, I tossed the eggplant fries in a little cornstarch and fried them, and they made the most incredible topping for this pizza.  You can follow the recipe for everything else.

Fall is coming, even if it's still hot outside, and I know I'll be making this pizza again once it cools off!

VEGAN MOFO: Watermelon Salad

Today's vegan mofo prompt was to make a dish using all seasonal produce!  This incredibly simple has only 4 ingredients, is packed with flavor, and makes a great side dish or dessert.  I'm talking about watermelon salad.

All summer, we got these incredible, small, seedless watermelon, so I made them into this tasty dish.

Watermelon Salad


  • 1 seedless watermelon, cut into small cubes
  • 1/2 cup fresh mint leaves, washed then cut in strips
  • Juice from 2 limes
  • 1/2 tsp salt
Mix everything together and chill for 1 hour.  Enjoy!

VEGAN MOFO: Black Eyed Pea Sloppy Joes

Today, we are veganizing a staple of many people's childhoods... SLOPPY JOES!  What kid doesn't remember the sweet, saucy, meaty sandwiches?  Well, you can still have all that, even if you don't want something from a can or actual meat.  I got a large bag of black eyed peas in our CSA box, which seemed like the perfect base.

This makes a large batch, so you could freeze some for easy dinners throughout the month.  It's sweet, savory, filling, and packed with protein.

Black Eyed Pea Sloppy Joes


  • 2 cups dried black eyed peas
  • 1/2 cup dried quinoa
  • 2 jalapenos, de-seeded and chopped
  • 2 green bell peppers, de-seeded and chopped
  • 1 red onion, diced
  • 6 oz tomato paste
  • 14.5 oz diced tomato
  • 1 1/2 cup cherry tomatoes, cut in half
  • 1/4 cup extra virgin olive oil
  • 1 tbs salt
  • 2 tbs dried chipotle powder (optional)
  • 1/4 cup maple syrup
  • cracked pepper to taste
  1. Soak black eyed peas overnight.
  2. Boil black eyed peas for 30 minutes, or until soft.
  3. Cook quinoa per package instructions.
  4. Drain black eyed peas and let cool.
  5. Dice vegetables.
  6. In a large stock pot, heat olive oil on medium high heat.
  7. Add pinch of salt.
  8. Add in jalapeno, green pepper, and onion.
  9. Saute for 12 minutes.
  10. Add in cherry tomatoes, diced tomatoes, undrained, tomato paste, chipotle, salt, and maple syrup.
  11. Simmer for 15 minutes.
  12. Turn down to medium heat.
  13. Add in black eyed peas and quinoa.
  14. Mix until incorporated.
  15. Cook on low for 5 minutes.
  16. Serve hot on a bun!
