Vegan Eats Lately
Are you guys ready for a mega food dump? I have been hoarding food photos since before Hawaii, so I wanted to share some eats and life lately.
We kept our meals super simple before the honeymoon. That rice and chickpea dish was one of my favorites. This is me super excited about the trip!
When I'm in need of a fresh lunch salad, I look no further than Izzy's. I love to modify their Greek salad by throwing black beans all over it.
I started couch to 5k before it go so hot I couldn't walk outside. I've been walking on the treadmill most mornings. My goal is to work up to 3 miles a day.
We got fresh pinto beans in our CSA box, so I cooked them all day in garlic and greens in the crock pot. Then, I threw them on fresh salads. I've been really into hemp seeds lately as well.
Humidity hair = curly frizzy mess.
Salad toppings are serious business. If you cut veggies and put them in the fridge, all you need to do is put down your leaf base and top with your cut vegetables (and maybe a bean or seed).
This simple dinner was delicious! Rice + steamed veg + edemame + hot sauce = DINNER
Our friends, Sheridan and Drew, made us this INCREDIBLE dinner before we left for Hawaii. Can you believe I'd never had chickpea cutlets before? They were sooooo good. Josh and I are now obsessed with caulipots (cauliflower and potatoes). They brought this yummy hot sauce back from Vegan Vida Con, and I happily found it at Whole Foods the other day.
We even had Daiya strawberry cheesecake and vegan whipped cream. It was SO tasty. I need to get one for our freezer.
I had this incredible fusion fried tofu from Sky Modern Japanese. This place is really tasty.
To me, there's not a lot of things that are better than a ripe, Arkansas tomato, drizzled with olive oil and a crack of salt. It's hard to even look at a tomato during the rest of the year, because they pale in comparison to these beauties.
I had to man our booth at a convention last week, which put me downtown during lunch time. I got excited, because that meant I could eat at The Veg LLC.
This is the best sandwich I've had all summer. The bread was crispy and salty, and the chickpea salad was full of apples and raisins. It was incredibly yummy.
Well, there you have it! I know it's a lot of random eats. I think the theme for the summer has been fresh veggies!
