Before I get to today's post, let me just say how INCREDIBLY happy I am that the supreme court has ruled in favor of marriage. I feel proud to be part of the married club, and I'm even prouder that now tons of people that I love can join that group. I have felt an incredible shift in the culture in just my short life, and I'm happy with the direction that the country is going. Sure, I get frustrated just like anyone, but I have hope that we as a society are changing for the better.
And now, onto the June recap!
Apparently I was so busy with the wedding in May that I forgot to do a recap. Luckily, I'm past that, and I even managed to do some cooking in the month of June! It was a fun month, but it BLEW BY! Does anyone else feel like June happened in a flash? That doesn't bother me too much, though, because our honeymoon is just around the corner!
You guys got to meet Miss Fiona Boxley, our new kitty. She and Bazie have gone from tolerating each other to full blown best friends. It's been so fun to see.
I continued recapping our CSA box, which started bursting with carrots and tons of greens.
I made a curried carrot soup with croutons and salad for our first BBQ of the summer. It was a great party!
I rocked out a 50 mile bike race that ended in brews and an amazing sandwich from Diamond Bear. On the horizon for the end of the summer is another bike race that sounds a little insane. The plan is to bike from Diamond Bear to Pinnacle Mountain, CLIMB THE MOUNTAIN, then bike back. I guess that's a good way to ring in your 30th birthday? Did I mention how hot Little Rock is in the summer?
I recreated this amazing BBQ tempeh sandwich from The Vegan Roadie. If you're not watching that Youtube channel, you should be! Is it just me, or has vegan blogging moved on to vlogging? I don't think you guys will see me making videos anytime soon, but I do enjoy other vloggers.
I spent a week eating everything in taco form when it seemed like everyone I knew was in Austin.
I got to eat a chick'n biscuit, and it was DELICIOUS.
I hung out with Agrilla the Bun and tried out some tasty vegan food. They have turned the curry burger into tacos and are adding vegan cheese to the BYO grilled cheese menu. I'll keep you updated on where you can find them. If any of you are heading up the Mulberry Mountain for the Highberry Festival, you'll see them there.
Since it's summer, I ate a lot of lunch salads! In addition to that, I got in a lot of great workouts!
July for Josh and I means HONEYMOON! We're traveling to Hawaii, a place neither of us has ever been. I'll be gone for a big chunk of the month, and I'm going to be giving myself a bit of a blog and social media break. So, I won't be answering comments or emails until I get back. No worries, though, because I have tons of posts still coming your way. They will include:
