Easy Vegan Dinner Ideas
In the summer, or anytime really, I don't want to spend a ton of time at night in the kitchen. Here are a few staple dinners that we do a lot with summer produce. They're meant to inspire you to throw some stuff together without a recipe, because that's what we do most nights.
We call this an eggplant bahn mi bowl. Simply bake some eggplant, steam some broccoli, and boil some rice. Then, pile on your favorite toppings!
When gardens start bursting with summer squash and tomatoes, it's ratatouille time! I like a few pieces of baked tempeh on the side.
We had a bunch of potatoes leftover from our car camping trip, so I mashed them all together, covered them in panko, and pan fried/steamed them. Latkes were born!
We had them with mustard greens and sriracha mayo, which made for a delicious and decadent dinner. Getting creative with leftovers is a hobby of mine.
