The Taco Diet

I wonder if it would be possible to eat all your meals in taco form?  I suppose smoothies would be difficult, but there are so many things you can eat in a taco.  Josh was out of town last week for work, and I found myself eating tacos three times!  Perhaps I was inspired by all my friends' beautiful pictures from Vegan Vida Con, an event I would have loved to attend but couldn't, perhaps it's because Josh was also in Austin eating amazing food, or perhaps it's just that tacos are the shit.

First up in my taco diet were these black bean and kale tacos.  I had originally planned on making a kale bowl, but after a great yoga class, I was starving and realized we had some corn tortillas in the pantry.  So, I busted out some black beans (ones which I had cooked from dried beans and then frozen), some CSA kale, lettuce, and green beans, and some hot sauce.

I topped them with the creamy avocado dressing I made for the Fire Station Picnic last week.

My second taco event came Wednesday night at Local Lime.  My girlfriend, Amber, and I hit the town and chowed down on these bit size yummies.  We had kind of terrible service, which I thought was unusual for the place, but we didn't let it ruin our night.  We ordered a salsa trio, which they screwed up, but they brought us out a house salsa to make up for it.  The salsa with pepitas has cream in it, so neither one of us wanted anything to do with it.

I got the new grilled zucchini tacos with roasted corn.  The menu item has two dairy items on it, but I had them take it off and add guac.  It was really good.  Along side it, I got the black beans and the shredded slaw.

The coup de grace of my tour of tacos was this beautiful tofu scramble dinner.  I did my standard low carb tofu scramble, and along side it I roasted up some beets following this Minimalist Baker recipe.  Of course, I couldn't stop there.  I had to top it with a few slices of avocado and some spicy salsa.  This dinner was so.good.

I have found that the key to a good corn taco is double tortilla.  I'm not a dainty filler kind of girl.  I stuff huge amounts of filling and try to wrap it all up, and if there aren't two tortillas, there's usually a blow out.  So, take my advice:  double wrap it.  Or... you know.. don't put so much in your taco.

I have been really loving beets lately.  They come in our CSA box, and all I want to do is make these rosemary chips.  They do create quite an alarming scene in the bathroom, if you know what I mean...

This dinner is going to get in a constant rotation.. I can feel it.  Finally, this is the reaction I'll give you if you ask me to go have tacos with you.  I love tacos.
