VV Recap: Fresh Meals Lately
I am sure that a lot of you want to see wedding pictures from this past weekend. Well, I'm not insane, so I pre-wrote some posts for this week. We're not rushing off to our honeymoon just yet, so I will hopefully get back into a regular posting schedule soon. Thanks for bearing with me through it all. You guys are the best.
This year, I feel like I have really been taking better care of myself, and the result is a significant improvement in my overall mood. The one thing that has really been different for me this year is the amount of fresh fruits and veggies I've been cramming into my diet. It's made a huge different. Here now is a collection of the fresh meals I've been eating lately.
I live for smoothies. They're how I start my day, and often times I have one with lunch or in the afternoon. They're a great way to get protein and fruits and veggies into your diet.
Green smoothies, blueberry smoothies, strawberry smoothies, chocolate peanut butter smoothies, mango smoothies.. you name it, I'm drinking it.
BIG ASS SALADS
Lunch for me almost every day is a big ass salad. The combinations might change, but the dressing (a little tahini) and the quantity is usually the same. I definitely eat for volume, so filling up on a big salad makes me feel great.
Sometimes, I throw a big veggie sandwich in my lunchbox and pair it with a small salad. Either way, it's a lot of veggies.
I have really been loving vegan cream cheese and cucumber sandwiches.
Dinners in our house have been incredibly simple lately. I will find a protein, a carbohydrate, and a pile of vegetables. I really love cooking this way.
Vegan diets really are full of abundance and beautiful food! I can't stop eating kale and strawberries right now. So happy it's spring!
