April seemed to fly by, and I realized I didn't really give you any new recipe posts the whole month. Truth is, I haven't been doing any testing in the kitchen for ages. Most of my weekends are currently taken up with wedding stuff, (or fun stuff like this weekend). I have been doing a lot of cooking, though. Are dinners have been repetitive and simple, but they have been very tasty. I'm currently obsessed with dino kale, cooking huge batches of it for dinner.
At the beginning of the month, I outlined my VV Reset. This really is less like a cleanse or diet and more just how I eat these days. When I'm sticking to these guidelines, I feel excellent. I had some indulgent meals out, but most of the things we made in the kitchen were light and yummy.
I enlisted the help of some amazing fellow bloggers to bring you this huge list of smoothies. Has anyone had a chance to make one, yet?

Spring is here to stay in Arkansas, and I got outside and enjoyed the beautiful weather. Our weekend in Ponca was started off with an amazing hike.
We tried out a new brewery in Fort Smith and found a massive veggie burger and some tasty beer.

I didn't get to post about it, but our friends Sheridan and Drew bought a house, and they had a housewarming party a few weekends back. Just look at the vegan spread! I ate more than a few of those pigs in a blanket. I also got to hang out with Bianca from Vegan Crunk. I got the last picture from Sheridan. It was so much fun!
May promises to be another busy month, so I'm going to keep the posting to three times a week. We are under the two week mark until the wedding, and I'm calm and excited. I can't wait to share all about it!
