Spring is here, and Little Rock's farmers' markets are starting back up. I hit up the Bernice Garden Farmer's Market on a beautiful Sunday morning, and I found all sorts of local delights. These fresh ingredients were perfect for simple meals, as I'll show you below.
I knew I wanted some hummus and pesto from Geek Eats for a sandwich I was thinking up. When I got to the market, I saw tons of greens and strawberries, so I got in line and snagged some. Then, I headed over to That's So Raw's booth. They recently took over Garden Press, so I got a beautiful beet and grapefruit juice for my breakfast.
This juice is amazing. It's sweet, filling, and tart. It has hints of mint, which are really nice as well.
Other hauls from the market included: raw vegan nacho cheese and kale chips from That's So Raw, carrot hummus and almond pesto from Geek Eats, and dino kale and strawberries.
When I got home, I knew I wanted to make a grilled cheese type sandwich with the pesto. We had some asparagus as well, so I made a roasted garlic and asparagus salad from my Cooking Light magazine.
The sandwich had roasted zucchini, spinach, carrot hummus, and pesto. The garlic, walnuts, and asparagus made a really great salad.
For dessert, I whipped up these super easy 3 ingredient coconut biscuits, then covered them in strawberries! These are so easy to make!
A few nights later, I found more great uses for my haul. I steamed the kale and baked some BBQ tempeh wings, which quickly got covered in the vegan nacho cheese. I even used some of the pesto as a sauce for my pasta. I love when I can get well made, local food staples. I'm so happy that spring is here!
