WIAW: Snow Day
It's been awhile since I did a "What I ate Wednesday" post, so I thought I would update you guys on recent eats. This is actually what I ate last Tuesday when we were snowed in our house, but today is Wednesday, so here we go!
We got just enough snow to make the roads dangerous, and Josh and I can work at home easily, so we stayed inside. I know most people wouldn't bat an eye at this dusting of snow, but in Little Rock, people freak out at the slightest hint of winter weather.
I took the time home in my kitchen to bust out the vitamix and make smoothies for us. Josh loves berry smoothies, and I jump at the chance to get him to eat chia seeds, so it was a win win. This was protein powder, tons of berries, maca, almond milk, and chia seeds.
I also drained and pressed tofu so we could make dinner that evening. I was craving some simple baked tofu and veggies.
This was my morning set up while I redlined a drawing set and watched the news. Then, I headed into my office to work on the computer. Most of my week was spent working on a 3d model and renderings, which is pretty fun work. I also helped a co-worker on a fire station project we currently have going.
Josh and I worked for awhile, and we realized Basil was being entirely too quiet. I walked into our bedroom to discover she's destroyed another roll of toilet paper. That's her big thing lately. We've had to lock her out of all the bathrooms for fear of her tearing through all of our tp.
She thinks she can get away with it, because she's so cute.
She's probably right.
Around noon, I got the strong urge to bake something, so I headed into the kitchen to make lunch and treats for later. I whipped up these Blueberry Muffins, changing the recipe only to add lemon and zest. I love lemon + blueberries. We split one after lunch and froze most of them for treats later.
I also whipped up a veggie sandwich with vegan mayo and a cup of black bean soup. The soup is really great and so easy to make, and I'll share the recipe tomorrow.
I'm pretty sure that the proper way to eat a sandwich is dunked into a bowl of really good soup... OH.. and covered in hot sauce.
Since we were working at home, my commute from the office to the gym was just across the house. Got to love that! After the treadmill, I busted out the tofu I had pressed and marinated all day. I roasted these in the oven with some garlic for 30 minutes while I baked an acorn squash and sauteed some greens.
I really think quick and easy dinners are my favorite. This greens bag I snagged from Kroger was great! I mixed the garlic in with the squash and a little curry powder, and I served a couple pieces of baked french bread + olive oil on the side.
Yum and yum! After dinner I crawled into the tub and then got ready for bed. Being snowed in is hard work.
Sounds like we have more in the forecast today, so I may have to bake something else!
