My friends are so incredible. We spent all weekend in Hot Springs having fun and eating delicious food, and at every moment my girlfriends made me feel incredibly loved and special. I'm going to give you a more detailed recap later in the week, but I just wanted to share with you this kick ass bridal brunch my friend Erin brought. She works full time and has a one year old, and she still managed to bring together the most delicious food. We had almost 10 girls there, me being the only vegan, and everyone raved about the tasty food. I contribute all this tasty awesome-ness to being the reason I didn't even come home with a hangover on Sunday.

Everyone lost their minds over this dish. It's pretty incredible how much we put in our bellies on Saturday, and it was totally worth it. Erin made a double batch, left out the garlic, and added artichokes. I will be bringing this dish to ANY party.
These were so delicious! Erin made a huge bag, and I got to take home the leftovers. I'll be sneaking these yummy treats into Josh's lunch all week. There were also truffle balls that were just cocoa and tofu, and they were really good.
If you're going to be drinking all day at a bachelorette party, you're going to need some protein. These awesome tofu quiches did the trick, plus they were full of yummy veggies. I've been eating the leftovers for lunch.
I've made my fair share of vegan chocolate chip cookies in my lifetime, but these really were the best. We all enjoyed smashing a chocolate truffle in between two cookies and letting the mouth party happen. Josh was VERY happy that there were leftovers.
