VV January Recap
So far, 2015 has been great, and January was a good month. I went back to really simple, plant based dishes. I got back in the gym and kept going to yoga consistently. I focused on gratitude. Life is good.
I thought I would recap for you some of my favorite things about January, in an effort to be grateful and happy about all things in life.
I started the year by telling you about my favorite dish of 2014, dumplings from Katmandu Momo. These dumplings are amazing, but so are the dumplings from my new favorite restaurant:
I have eaten at Three Fold Dumplings and Noodles three times this month, and I can't get enough. I wrote about my first experience in my restaurant review, and since then, I've gotten takeout and lunch there. By now, I have tried everything on the menu, and I would have to say that the dumplings are my favorite. I'm sure I'll be eating there more and more in the following months.
Speaking of eating out, Josh and I tried the new Lost 40 Brewery. I thought they could improve on their veg options, but overall, the flavors were good. They got in touch with me through instagram and said there would be more things on their spring menu that would make us veg heads happy. I can't wait to go back.
I felt very motivated by the Little Rock Forks over Knives screening, and since then, I have been seeing #kickstartlittlerock everywhere. I got to do a write up on the experience for the Arkansas Times. Also, there is a new instagram account that I'm loving, VeganLR, that showcases great meals you can find around the city. Give them a follow if you want to see what other vegans are eating in Little Rock.
My favorite recipe this month was this delicious, healthy lentil soup. It's so easy and tasty. The weather is still cold, so look forward to more soup in February.
