Tahini Stuffed Sweet Potatoes
For Valentines Day, Josh and I had stuffed potatoes. They were so delicious, that even though I didn't bust out my Nikon and take a bunch of staged pictures, these were too good to not share! So, I snapped a few quick pictures with my iphone. Believe me, these are incredible.
These are so simple that they really don't need a recipe, either. You can put in what you like, but I'll tell you what we did:
Bake a sweet potato at 350 degrees (F) for 1 hour.
Cut open and mix the insides with 1 tbs tahini, sauteed greens, onions and peppers, and chickpeas.
Put back in skin and top with pumpkin seeds.
Bake for another 10 minutes.
Cut it in half and share with your sweetie, or tell them to get their own! It's so good, you may not want to share.
