I've been doing a bit of traveling lately and not a ton of cooking. When that happens, I like to keep my meals super simple. Now, you might think this doesn't warrant a post, and it certainly doesn't warrant a recipe, but one of my favorite things to eat in the winter is a simple dish of squash and greens.
Usually, I bake an acorn squash, scoop out the inside, and mix it with curry powder and some sort of fat. I usually use olive oil, Earth Balance, or coconut oil. You can omit the fat and use a little splash of almond milk, if you feel like it.
To complete the meal, steam some kale and broccoli and have it along side. This is satisfying and delicious, and it's ready in just a few minutes.
