As you guys know, I have resubscribed to Vegan Cuts. I have been enjoying their snack boxes, and I got the idea to try to make one recipe from something included in the box. Before I give you that, I'd like to tell you what was in the box. I won't be doing this every month. Truth be told, we just got our December box, and I have already inhaled almost all of it without taking any pictures. Sorry about that, but I did put one thing aside so I can make a dish. I did photograph November's box, so here we go:
These black ramen noodles were AMAZING, and they are the item I decided to make a dish from, so I'll be talking more about them in a minute.
I very much enjoyed these seawee chips. They actually came in my December box as well, and I didn't even care that it was a repeat. They're very salt and taste like nori strips.
I did not really enjoy these cinnamon crunch snacks. It's not my favorite flavor, and they were too sweet for me.
Holy delicious quinoa chips, batman! These were fluffy, salty and delicious. I'll be keeping my eye out in stores for these.
I think this crunchy bean snack was my favorite item in the box. It was really salty and crunch and was a satisfying snack.
I love that there's almost always some kind of chocolate in the box, and I have not been disappointed thus far. This raw and roasted cacao bar was great.
These sunflower seed snacks were crunch and delicious, too. There were so many great salty snacks in this box.
I'm sure if you don't have an aversion to coconut like I do, you would like these macaroons. Unfortunately, though, I did not dig it.
Have you been missing fig newtons since going vegan? Fear no more; these fig bars are great!
I'm going to sum up both of these with one review, which was no, I did not like these. I think it's the texture, but it was just WEIRD.
Let's get back to these black rice ramen noodles. This is a super easy dinner for two that you can throw together with very minimal prep.
Black Noodle Dinner Bowl
- 2 black noodle patties
- 1 medium size bell pepper, diced
- 8 oz prepackaged baked tofu, cubed
- 2 garlic cloves, minced
- 1/2 tsp fresh ginger, grated
- 1 tsp sesame oil
- 1 tbs tamari
- 4 cups spinach
- Boil noodles per package instructions.
- Once noodles are boiled, rinse with cold water and set aside.
- In a large wok, heat to medium and add oil.
- Throw in green bell pepper, garlic and ginger and saute for 3 minutes, being careful not to burn the garlic and ginger.
- Add in the tofu and spinach and saute until spinach is fully wilted, about 6 minutes.
- Add in the noodles and tamari and saute for 2 minutes.
I love a big pile of spinach! You could use kale or broccoli or any other favorite green in this recipe as well. It's very simple!
