Make This Month: Black Bean Brownies
I have been keeping things on my Things to Make This Month Board, and the first recipe I followed through with were these black bean brownies. I made a few modifications, but they were really tasty. I saw the recipe on Finding Vegan, and I knew I would need to make it.
Instead of cocoa powder, I used raw cacao, because that's what we had on hand. I also used melted coconut oil instead of vegan butter. The result was a batter that tasted like delicious fudge.
The resulting brownies were a bit on the gooey side, and they were incredibly rich, but they went really well with a little ice cream. You can have a small portion and still feel satisfied.
I served them at a game party we had with our friends Sheridan and Drew. We also put out two beautiful, raw vegan cheesecakes made by That's So Raw. It was a feast!
So, I would recommend you go out and make these immediately, and if any of you have any black bean brownies I could try, let me know. I would like to try a few more variations.
