Ok, I know it's January, not October, but I'm not tired of pumpkin yet. In fact, we are past the pumpkin burn out and back to pumpkin lovin'. Plus, I have a bunch of frozen pumpkin in the freezer that needs to be eaten, so here we go.
Awhile back, my Vegan Cuts box came with Vegan Smart nutritional shake, which has protein, vitamins and probiotics. I like the stuff, and you can order it on Amazon. It seems fairly comparable in price to the other protein powders that include vitamins and probiotics. Right now, I have a rotation of many going, and I haven't gotten stuck on one single brand. This one has a chai flavor, though, which I thought would go great with all the frozen pumpkin I have amassed.
This recipe is really simple, but it's sooooo tasty!
Chai Pumpkin Protein Smoothie
- 2 ice cube blocks of frozen pumpkin
- 1 tbs maca powder
- 1 tbs chia seeds
- 1 tbs almond butter
- 1 packet or serving of chai protein powder
- 1 cup almond milk (I used protein plus)
- water and ice to mix
Mix in a blender (I used the Nutribullet at work) and enjoy!
This smoothie would make a great recovery shake after a killer workout. It's PACKED with protein.
