So many of us spend so much time trying to decide what we should and shouldn't eat. Sometimes, it gets very overwhelming, as I'm sure I have spoken of before. So, and this is not an original thought, I choose to focus on what to add to my diet, instead of what to take away. Whether or not soy or gluten is good or evil, it matters not to me. What I do think really matters is how many fruits and vegetables you can get in your diet, because that is really the key to a healthy diet.
I'm trying to bring tons of fresh, whole foods to the office. Above is my black eyed pea chili, with a little cashew cream, with a side of grapes and almonds. I love salads and smoothies for lunch, but as the weather has been bone chilling lately, a big cup of hot veggies is just the thing.
Often times, it's easy to look at a menu and think you can't order anything. I challenge you to look at the sides, though. I went to lunch at Loca Luna recently, and by just ordering two small sides, I had a lovely lunch, full of veggies. Sometimes, you don't need a lot of starches to complete a good meal.
I've seen the combination of avocado and pomegranate seeds on toast across the internet, and I'm here to say that it's a wonderful combination! I've had it for dinner and breakfast several times, and it's quite tasty.
I've also been obsessed with pears lately. They're so yummy.
I took our mashed potatoes from New Years and turned them into potato pancakes. I have been trying to add in tons of greens at every meal, too.
I have also been loving this salad for lunch as well. Beets + salad = great!
Most mornings, I have been bringing 2 grapefruits or oranges to the office and fresh squeezing them for juice. It's really easy to get a citrus juicer and go to town. I'm not sure why I didn't think of this before. I think my favorite thing about winter is citrus.
When I was on the Arbonne detox last year, I made smoothies for Josh and I often, but I got out of the habit over the year. I'm bringing it back, though! This was a vanilla protein, maca, and strawberry smoothie. I always throw in chia seeds for good measure!
Continuing with this liquid theme, I made a big batch of carrot apple juice the other day and had a little bit for breakfast for a few days. It was yummy.
Also, can we just talk about how tasty fruit is?! The cleaner I eat, the more I can appreciate it, and the more it keeps me satisfied after eating.
I'm really not eating out that much, because I've been packing in my work lunch, and Josh and I only eat out once a week, usually, if at all. We did go to lunch Friday, though, and I ordered this beautiful salad at Big Orange Midtown. I subbed avocado for the goat cheese, and I enjoyed every bite.
So, go out and fill your grocery cart with fresh fruits and veggies! It will keep you feeling light and energetic. Remember, don't think about what you need to remove from your diet, think about trying to add in as much fruit and veg as possible.
