Vegan Mofo Recap: Blogs Found


During Vegan Mofo, I found so many awesome blogs.  I want to share with you some of the ones I will for sure be putting on my blog roll!  First one is Floral Frosting!  This blog is adorable, and the recipes look amazing!


Zzu's Vegan Pantry

I was inspired by all of the amazing things coming out of this blog.  The recipes and pictures are sexy, and I'm definitely looking forward to following along more.


Red Hot Vegans

These crazy Austin vegan are amazing!  I love reading the restaurant reviews, and it makes me want to take a road trip, immediately.



This blog had really pretty and in depth restaurant reviews from around the South.  As a fellow southern vegan, I really enjoyed this blog.



I loved this blog for the cleanliness of the photography and the simplicity of the dishes.  I will definitely keep following.



Vegan recipes from A-Z was the theme on My Darling Vegan, and it was one of the most cohesive Vegan Mofo blogs I saw this year.



I can't say enough about Beard + Bonnet.  The photography was breath taking, and I know I will continue to be inspired to make prettier food.



Popcorn and Nooch caught my eye, because they did a Bob's Burger Post.  It's one of my favorite shows, so I want to see more veganized awesomeness from them!

Of course, there were tons of wonderful blogs, but these were definitely my favorite!  Did you find any blogs you wanted to follow after Vegan Mofo?

Vegan Mofo Recap: Amazing Recipes


As Vegan Mofo comes to an end, I wanted to share some of the amazing recipes I've seen around the blogs this month.  I have been logging them on my Vegan Mofo 2014 board,  and there were almost too many wonderful recipes to count!  The first recipe I wanted to share was this Norman Walker Salad from Danielle Joy.  Doesn't it look amazing?


This Quintessential Guacamole from Beard + Bonnet was not only a tasty looking recipe, but the photography was absolutely beautiful.  Tomorrow, I will be sharing vegan blogs that I found during this year's Vegan Mofo, and Beard + Bonnet is at the top of the list.


Don't these Salad Roll Whoppers look amazing?  Yes, I think they do!


Who doesn't love samosas?  Well, this is a samosa SOUP!  That's what I love about Vegan Mofo.  You see so many creative and wonderful recipes!


My girl, Bianca, from Vegan Crunk had amazing posts all through Vegan Mofo.  She did a pantry clean out, which I think was a great theme.  My favorite was her dining challenge based on a British TV show.  Check it out here!


Pizza and burger.  Need I say more?


There were also healthy recipes, too!  This Roasted Vegetable Tahini Rice Bowl looked right up my alley.


Zsu's Vegan Pantry kept the amazing and delectable dishes coming all month, and this Premium Patty Melt looked too good to be true.


This Eggplant and Caramelized Onion Pizza was so beautiful.  I want to make it immediately.


Not only did Glue and Glitter pull together an awesome salad recap during the first week of Vegan Mofo, but my chickpea and corn salad made the cut!


This girl loves jar salads, and this informative post on it really caught my eye!  Mason Jar salads must still be in vogue, because Vegan Crunk had a great post on them, too.


Where do you get your protein?  Why, BBQ baked black-eyed peas, of course!


No food recap would be complete without some sweets, and these Chickpea Almond Pancakes are really sexy.


You know I love tacos, as evident in my taco posts.  These Roasted Hatch Chili & Yam ones looked fantastic.


Are there many things better than avocado and toast?


With Halloween approaching, I think I need to make these vegan candy bars immediately!


With an omni-partner, I'm always on the lookout for new, hearty vegan recipes.  Sloppy Joe's are one of his favorites, and I think these Lentil Sloppy Joe's will be perfect!


Something I have never done is make infused salts, but after this Infused Finishing Salts post, I need to get in the kitchen!


Two words, tempeh + black beans.  I want this now!


More tacos, more happiness.


I love the blog  Fork and Beans.  All through Vegan Mofo, Cara has been giving us beautiful, delicious looking Halloween treats.  This Bride of Frankenstein Dip is one of them.  I'm definitely putting them all on my must-make list.


Joni at Just the Food always brings amazing recipes, and this Bloody Mary Mix is just what the hangover ordered.



Did I already mention the crazy awesome things coming from Fork and Beans?  Yeah, try these mini butterfinger cheesecakes!



I would not have thought to put cauliflower in a sandwich, but this post really turned my head.


Vegan Pizza Rolls... that's all you need to say.


I was fortunate enough in college to travel to the UK and get to experience a Full English Breakfast, but this VEGAN ONE takes the cake!

The Best Thing About Blogging


I have always struggled with self confidence.  I am my worst critic, and often I'm not very nice to myself.  That has started to change, though.  The best thing that I have learned since starting this blog over a year ago is how to like myself.  When this all began, I really saw this as a motivator to lose weight and start tackling some of the depression that lingered so deeply in my mind.  I thought I would be more accountable by showing daily tallies of my food intake, and therefore, I would magically get slim.  That's not exactly what happened.

As I started to write and express myself, I found a real outlet for the things I was experiencing on a daily basis.  It felt great to sit down at the keyboard and share the ups and downs of my experience, whether it be what I felt about veganism, what foods I was digging, or what new exercise I was currently in love with.  As all this kept going, I really started to get a feel of what foods made me feel great (and which did not) and what behaviors made me compulsive and unhealthy.  I started to weed out all the negative thinking about calories and food rules, and ultimately, I was just left with myself.  Then something interesting happened.  I started to like myself.  I started to feel confident and happy, something that I never thought would happen until I reached some magical number on a scale.  I started enjoying shooting beautiful photos, talking about how much I loved yoga, and coming up with recipes jam packed with veggies.

I started to enjoy the journey of healthy eating, and I started to understand that there was no end goal.  The goal was to be kind to myself, day by day.  I still have bouts of negativity and depression, but through writing and understand myself better, I can identify when these moods overtake me, and I know what I need to do to correct them.  That is a true gift.  It has taken almost 2 decades for me to make peace with my body, for whatever size it is, but I have begun to see the beauty in it, just the way it is.

Three posts over the past year and a half have really stuck out to me as turning points along my journey.  They hit me with such total clarity that, half the time, I'm jumping out of the shower to run to the computer and type it all out.  This blog might be mostly about vegan food, but I hope that it also carries a message that you can do anything you want to, and you don't have to be any different than the way you are now.

10 Fave Big Ass Salads


Although it might sound cliche, since we vegans are supposed to only eat rabbit food, but my favorite thing to eat is a big ass salad.  Salads don't have to be dainty, or for the faint of heart.  They can be massive piles of protein and produce, all blended together with a great sauce and served on greens or crackers.  There are no rules with salads.

It was hard to work my list down to just 10 of my favorite ones, but here we go...

10 Fave Stuffed Sammies


The sandwich.  It really is a great way to cram a ton of vegetables and vegan protein in your mouth, and the possibilities are endless.  In my more fanatical health leaning days, I would shy away from sandwiches because of... gasp... bread, but lately, I have learned to relax a bit.
