Give Me Pancakes or Give Me Death
I would like to say thank you and send my love to all of you amazing people. Your comments on my last post really made me feel better, and I appreciate you letting me rant all over the internet. I'm feeling optimistic and positive and much more like myself. I really felt like I was losing my voice, and now I feel like it's back, loud and proud.
One thing that I really love are pancake Sundays, as I'm sure many of you know. Now, I think it's probably a good idea to say that eating pancakes is a treat, but it's a treat that I enjoy. Because I made such a huge batch of them, we got to have them for dinner as well. Pancakes for dinner are the best.
Coming up with recipes is something I really love to do, but only when it comes to cooking things. Coming up with baked items, even pancakes, it's completely beyond my skills as a home cook. So, when I wanted pancakes, I reached for my copy of Isa Does It. I flipped to the pillow pancake recipe that Josh and I love, and I added a TON of blueberries. Sunday brunch was complete.
Sunday pancakes were majestic. I recommend not eating more than a couple, or you might spend the rest of the day on the couch rubbing your belly. What will I do with all these extra pancakes, you may say? Reheat them for dinner, and throw some vegan bacon on top!
Prepackaged vegan bacon is not something that is in rotation on my grocery trips, but this treat was worth it. I fried up some pieces and slapped them on top of these wonderful pancakes. Then, I saved the rest for an avocado sandwich.
We don't usually eat dinner until late, so something this heavy was not exactly what my stomach wanted at 9 pm, but it was still good. Sometimes, you just need pancakes.
