The theme this week is ORANGE. It's winter, which means citrus is in season. This makes me incredibly happy. I have been eating clementines by the bowl full, and I've even been incorporating them into my smoothies!
Morning Sunshine Smoothie
- 1 scoop vanilla protein powder (optional)
- 2 peeled clementines
- 1 tsp tumeric
- 2 large carrots
- 1 tbs chia seeds
- 1 cup almond milk
- 1 cup ice
- water to thin
Blend and enjoy this Vitamin C blast to your face! It seems like everyone is touting the benefits of turmeric lately, but we vegans have known about its wonder for years.
We have been eating pretty late at night lately, so I haven't been overly hungry for breakfast. So, instead of a huge smoothie, I've been eating almonds and clementines as a mid-morning breakfast. It's such a great flavor combination.
It's been mostly salads and smoothies for me lately, but I did have one indulgent meal out this past week. We headed to Big Orange for lunch one day, and their burger special was the Food Truck burger. It had kimchi, bbq sauce and veggies topped on their house vegetable burger. So. Good.

I'm a full swing back into yoga, with a lovely side of meditation. Josh and I were training for the White River Half Marathon, but I dropped down to the 5k due to some knee trouble. We also climbed Pinnacle Mountain on Sunday, and I would like to continue to add more hiking to our activities.
We are missing Bodhi a lot in this house lately, but we are fortunate to have Basil. She's a real sweetie.
