Easy Quinoa Pasta Dinner

If you have been reading this blog long, you know I love an easy vegan dinner.  This dinner is so easy and incredibly tasty.

When I picked up this pesto at the farmer's market a few weeks back, I knew I wanted a pasta dish.  Now, I'm not gluten free, but I love a good gluten free pasta.  They tend to be heartier and chewier to me, which I like.  You can make your own vegan pesto by combining basil, olive oil, lemon juice, walnuts and salt and pepper in a food processor, or you can use your own favorite store bought kind.

I kept this very simple.  I boiled the pasta per package instructions, and while that was cooking, I steamed the broccoli right on top in the same pan!  Once all that was done, I tossed the pasta and broccoli in the pesto and topped with pumpkin seeds.  Dinner is served.

Feel free to jazz it up with a little hot sauce and salt and pepper.  I know I did.

This is also great with a small side salad and your favorite crusty bread.
