Vegan Eats Lately


It seems as though I have not been in the kitchen as much lately, and if I am, I'm whipping up something super simple.  I don't usually jot down the recipes for the easy things that I eat, but most of the time, I snap a photo.  Here are foods I have eaten out and easy peasy dinner recipes from the past few weeks.








I love Sky Modern Japanese.  The food is so fresh and well prepared, and they have real matcha green tea.  I love their seaweed salad.  My favorite vegan sushi roll is just a plain avocado roll, so I usually get that.  On this trip, I was really hungry, so I got a veggie roll too.


Have you ever had champagne grapes?  My wonderful hair dresser, Kate Worell, introduced me to them at my last styling.  They are very tasty, but kind of hard to eat.



My favorite lunch lately has been toast, Earth Balance, avocado, fresh tomato and salt.  I really like to savor each bite when I have this dish, because there are so many flavors going on.




Huge salads are my favorite dinner.  I usually start with a base of spinach or romaine, carrots, green onions, bell peppers, nuts and a protein.  In this case, I pan fried a few slabs of tofu and covered everything in pepperoncini.



What should you do when you have leftover pan fried tofu?  Make breakfast!  I love a good English muffin, daiya cheese, tofu, wilted spinach and salsa.  This brunch will keep you full most of the day!




I have done some actual cooking and recipe development, but you'll have to wait until later this week to read about that.





I am still drinking smoothies for breakfast and lunch almost every day.  I have fallen into a pretty standard routine.

Breakfast:  blueberry almond butter with protein powder
Lunch: spinach and strawberries with protein powder



Did I mention I love big ass salads?







Since we just got back from St. Thomas, I have not had a lot of time to go grocery shopping.  So, I have been eating at Izzy's with the office quite often, and I have eaten at the Whole Foods salad bar many times over the past couple weeks.





Last week, I had a block of tofu in the fridge, so I whipped up a version of Bianca's Tofu Eggless Salad.  So yummy!!

I'm ready to get back in the kitchen and start making meals more consistently!
