Mama V's Italian Vegan Spread
For Labor Day, I gathered up some of my best girlfriends and headed to my parents' house for a weekend of great food, swimming, and wedding dress shopping. When we arrived Friday night, my mother had an amazing spread.
Not only can she cook, but she's a mean hula hooper!
Ok, back to the amazing food. My mom had a huge spread of antipasto ready as we relaxed and settled in for the evening. She made this amazing bean dip full of garlic, spinach and olive oil. We all enjoyed piling it high on the crusty bread. The olives and melon were a good combination, too. I'm definitely going to steal the idea for this spread for my next dinner party.
Second course was a fresh, delicious salad. The cherry tomatoes were from my mom's garden. I should have snapped a picture, because her garden was bursting with hot peppers and herbs. I had my salad with a little olive oil and fresh pepper. It definitely made me feel like I was home. My mom has always made big Italian spreads for us, and it's my favorite thing she cooks.
Now, can we talk about this lasagna?? Oh. my. god. It tasted more like an amazing Eggplant Parmesan than lasagna, which is what I prefer. My mom loosely followed this recipe, but she always puts her own flair on it. My dad made a huge pot of the home made sauce, which was delicious. He told me his new secret for adding just a hint of sweetness to the sauce. My parents recently bought a juicer, so he's been saving the carrot pulp and adding it to tomato sauce. What a great idea!
This was the perfect opening meal for my Birthday weekend, but it was not the last!
