I think this summer can be defined for me by the tempeh rib. I can't stop making them. First I made them paired with summer salads, then I had them along side kabobs and spicy potatoes, so I knew I had to share them with my parents. I snagged 3 packs of tempeh and a spicy mango marinade at Whole Foods in Little Rock and brought it to Osceola, where my parents live.
On Sunday, after the Italian fest and Pizza party of the previous nights, we decided on an afternoon BBQ. I cut the tempeh into triangles and boiled them for 15 minutes. Then, I laid them out in this glass dish and covered them in marinade. They sat all day, and when it came time, my dad threw them on the grill for about 8-10 minutes on each side.
They came off the grill with crisp edges and perfectly cooked. Everyone loved it. I think tempeh is a great thing to serve up to meat eaters, because it's so hearty.
That's not all we had, though. My mom made this delicious pasta salad, filled with fresh veggies and topped with olive oil, salt and pepper. She also made black bean quinoa burgers, and man, they were good.
I piled my burger high with vegan mayo, bbq sauce, avocado, red onions and relish. It was amazing. All my girlfriends were full and happy!
I was really happy that they all made the long drive to come home with me, but they were definitely rewarded in meals. I think now they understand where I get my crazy love of food!
