My New Favorite Breakfast
This post needs no recipe, but it's still delicious. I wanted to show you what I love to eat when I'm not digging on smoothies. You can do this with English muffins or toast, but the key is sauteed greens. Here's the magic formula:
PAN FRIED TOFU AND/OR AVOCADO
PINCH OF SALT
That's all you need for a delicious breakfast. You can make it so fast, and this savory dish will fill your mouth with happiness. I know I'm not reinventing the wheel here, but sometimes we need to be reminded of how delicious a simple meal can be.
If you don't have time to press a block of tofu, slice it thin and press for just a minute with a towel, then throw the slices in a hot pan with a little peanut oil. It will infuse the pieces with tons of flavor, and you'll still get the crispy outside.
If you don't have time to melt the cheese slowly, put a cover on the pan, and it will steam.
