Grilled Cheese Saves the Day
Deadlines. They are all consuming. In architecture school, I barely thought about food. I ate when I got hungry, not often in a healthy way, and never planned. It was really only after I graduated college that my love affair with meal planning started. We are currently in a huge time crunch at work, and I have a huge deadline this week (on my birthday). I have been stumbling into the kitchen after hours of drafting and throwing together what I can find. So, there has not been a lot of creative meal planning going on. Don't fear, I'm not losing my blog steam. I am just stressed out.
A straight grilled cheese would be great, but I always try to throw in something green in whatever I'm eating. This time, I had some Farmer's Market Cucumber Salad on hand and some avocado. The rest is vegan butter and cheese and your favorite bread. There's no wrong way to make a vegan grilled cheese, but it can really save the day when you need a quick meal.
Blogging is not my day job, so when architecture starts to take up 80+ hours in my week, it leaves very little room for cooking. I don't let it get me down, though, because it's incredibly easy to throw together a quick vegan dinner in no time flat.
