Black Noodle Squash Bowl
In keeping with the theme of quick dinners that save the day, this black ramen noodle bowl is another quick meal to make in a pinch. It follows my 5 Components of an Easy Vegan Dinner:
Protein Source: Chopped Peanuts and Peanut Butter
Veggies: Sauteed Summer Squash, Yellow Bell Peppers, and Onions
Grain: Black Rice Ramen
Raw: Green Onions and Sliced Carrots
Flavor: Tamari and Sriracha and Peanut Oil
My go-to meals are always made from things that I keep on hand all the time, namely nut butter, nuts, seasonal veggies and grains.
This meal packs up great for work too, so make a big batch and pack it up for the next day!
