BBQ Tempeh Party Wraps

Last Friday, Josh and I attended a BBQ at his boss' house.  It was an amazing party, and I knew I wanted to bring some awesome vegan food.  I'll give you the whole menu tomorrow, but for my main dish, I wanted to make something hearty and delicious that all of the non-vegans would like.  I wanted to do something that would look accessible and be easy to snag off a plate.

I often make BBQ tempeh wraps, like this one or this one, for my girlfriends when they come to visit, so I knew it would be a hit.  This dish is easy, because there are just a few ingredients that pack in a bunch of flavor.

BBQ Tempeh Party Wraps
Recipe makes enough to bring to a party
  • 3 packages of organic tempeh
  • 1 bottle bbq sauce, I used Stubb's Sweet Heat
  • 2 large red onions, cut into thick rings
  • 2 -3 tbs vegan butter
  • 1 tsp salt
  • 1 cup soaked cashews (soak for 6-8 hours)
  • 2 tsp Tabasco
  • juice from 1 lemon
  • 1 package baby spinach
  • 2 packages of whole wheat wraps, or your favorite
  • 1 package hummus, or make some yourself!

In a large sauce pot, boil a generous amount of water.

Heat a large pan on medium/high heat.  Add butter and onions.  Hit with the salt and saute for 5 minutes.

Reduce the heat on the onions to just above medium and let cook down for 40 - 45 minutes, stirring occasionally.

Slice all the tempeh into thick strips.  Add to the boiling water.  Boil for 10 minutes.

Drain the water and add the bbq sauce to the sauce pot.  Let sit for 20 minutes.  Make sure all the tempeh is covered.

While that is sitting, add the cashews, Tabasco and lemon juice to a blender.  Blend until incorporated.  Hit with a pinch of salt if you like.

Place cream in a container and place in the fridge until you're ready to assemble.

Preheat the oven to 350 degrees (F).  Lay the tempeh strips on a baking dish.

Bake tempeh in the oven for 30 minutes.

Let the onions and the tempeh cool down before you assemble.  I made everything the night before the party, then I assembled them before the party.

To assemble, spread a thin layer of hummus on the wrap, or most importantly, on the edge where you'll seal the wrap.

Place a few leaves of spinach down, then 2 strips of tempeh, then a few onions and finish it off with the cashew cream.

Once you have everything layered, roll your wrap, folding the sides in first then rolling it over on itself.  Cut down the middle at an angle and set cut up in a container.

I served these cold, and they were great.  You could warm them up in the oven before serving, too.

I find that meat eaters tend to like tempeh, because it's firm and has a filling texture.  So, they make a great party food.

These would be great as a packed lunch for work, school or a picnic.  You could make some in advance and use them throughout the week.  They're incredibly versatile.

So, wrap these up and take them to your next get together!  Stay tuned tomorrow for more treats we brought to the party.
