Mama V's Weekend Breakfasts



Breakfast is the most important meal of the day, and Mama V sure made sure that I had two fantastic ones this weekend.  Every time I go home, I am reminded of what a good idea it was to send my mother a subscription to Vegetarian Times!  In one of the more recent magazines, she saw a recipe for chickpea scramble.  When I woke up Saturday morning, she had everything prepped and ready!





She had even whipped up these cute little vegan biscuits!  I'm such a lucky girl.





This breakfast wasn't just for me.  The whole family chowed down, covering their scramble with avocado and sriracha, and everyone loved it!  It makes me really proud and happy when everyone enjoys the vegan spread.


This breakfast was fantastic and filling, and it kept me going in the pool all day.


Before we left town, I whipped up this brunch using leftover tofu from the BBQ, plus some great essentials.  My mom had snagged a vegan sausage for me, and it was quite tasty.  She even had the kitchen stocked with Earth Balance and vegan cheese.  Talk about amazing.



This is so simple.  Pan fry the tofu, toast an English muffin, spread with Earth Balance and place a half piece of vegan cheese on each side.  Then, place your tofu on top, cover with avocado, salsa verde or whatever else you like!  Filling and delicious!

I'm blessed to have such a loving and supportive family, and I miss them already.  My Dad had a great Father's Day, and I can't wait to see them all again soon.

  1. Hi! The link to the chickpea scramble doesn't seem to have all the ingredients you pictured. Do you have a recipe for yours? Looks awesome!

  2. haha, my mom and i don't always follow recipes closely. she used 1/2 green bell pepper, 2 chopped carrots, 1/2 chopped red onion, a large bunch of fresh thyme, 2 chopped zucchini, 2 cloves garlic, 1 roma tomato and 1 tbs chopped banana peppers. she did use the seasonings that were specified. yum!
