Mama V's Father's Day BBQ

My mom and dad are amazing cooks, and this weekend was no exception.  From the second my sister and I walked in the door, we were greeted with amazing food and hugs.  I wish my parents lived closer, but it's so nice to head to their house for the weekend, relax, and eat great food.  I've talked about Mama V's amazing creations in the past.  Here are just a few:

My sister and I arrived at my parents' house Friday night, and apparently I forgot to take any pictures.  Guess I was too busy hugging my mom and drinking wine.  Oh well.  She made a great asian salad and used  Gardein Chicken Strips sauteed in teriyaki sauce.  They were really tasty!  I don't usually buy that sort of thing, but they were really good, and it was a treat.

Saturday, we got up and got in the kitchen.  In our house, we cook all day.  Mom made a killer brunch, all vegan for the whole family, which I will tell you about tomorrow.  I am so lucky to have such a supportive family.  My sister is even thinking about going vegetarian!

The vegan portion of the Father's Day BBQ was as follows:

Tequila Lime Tofu Tacos with Vinegar Slaw
Black Bean and Mango Burritos with Avocado Crema
Mexican Corn

The jalapenos in the marinade are ones she pickled from her garden!  We had so much food that we wondered if we should walk down the street inviting all the neighbors!

Unfortunately, I didn't write any of the exact recipes down.  That's not really how my mom and I cook.  I have to make a fairly conscious effort at my house to jot things down so I can share them with you.  When I'm with my mom, though, we tend to float around the kitchen, throwing things together and tasting them until they're perfect.  Saturday was no exception.

The burritos has brown rice, zucchini, black beans, cilantro, lime juice, mangos, cumin, daiya cheese, and salt and pepper.  We wrapped them in a wheat tortilla and baked in the oven.  I made a quick cashew crema from 1 cup soaked cashews, 1/2 avocado, and a little salt.

We also made a quick slaw using mustard and rice wine vinegar.  It was perfectly cool to go on our yummy tacos.  We made the corn tortillas from scratch as well, which was a bit of a challenge, but worth it overall.  We found that the key was not using plastic wrap but parchment paper.

Perhaps my favorite part of the meal was the grilled corn.  Mom soaked the corn, grilled it, then brushed on top a mixture of Earth Balance and chili powder.  Yum!

She even made this beautiful fruit salad for dessert, but I was too full to have any that night.  I took some home to Josh, though, and he was mighty happy about it.

  2. I just love your mom!! And those burritos with crema looks soooo good! I haven't done father's day yet bc I was at Bonnaroo, but we're celebrating this coming weekend. :-)

  3. thanks ladies! we'll have to have a vegan eats/pool party the next time we're all in northeast arkansas. bianca, hope you had a great time at the 'roo! i'm sure father's day makeup celebration will be awesome. :D
