Farmer's Market Cucumber Salad

I am so excited to share this recipe with you.  I don't often make things up completely on the fly and have them turn out so great, but this salad was killer.  Saturday, I hit the Farmer's Market with my friends, Sheridan and Drew, and that's where I found some amazing Arkansas cucumbers.  I bought a bunch, and when I got home, I was inspired to make this salad.

It is spicy, tangy, sweet and salty... and best of all, it's easy!  We ate it on burgers, which I'll show you tomorrow, as well as by itself.  Josh took one bite and was hooked.

Farmer's Market Cucumber Salad


Vegetable Base:
6 medium cucumbers, sliced thin
6 green onions, diced thin
1 jalapeno, seeds included
4 large cloves fresh garlic, pressed
2 tsp fresh ginger, minced

Sauce Base:
2 tbs olive oil
1/4 cup rice wine vinegar
1 tbs tamari or soy sauce
1 tsp sea salt
2 tbs maple syrup

optional topping:  2 tbs sesame seeds

  • Dice cucumbers, green onions, and jalapenos and place in a large bowl.
  • Press in garlic and mince ginger over the top.  Stir.
  • In a small bowl, mix sauce base together.  Season with salt to taste.  
  • Pour over vegetables.  Mix thoroughly.
  • Place in the refrigerator for 1 hour.  Remove and re-mix before serving.
  • Top with sesame seeds before serving.

Four raw cloves of garlic really seems like a lot, but it was so great.  The garlic was incredibly fresh too, and when mixed with everything else, it made a spicy base for the cucumbers.

I promise, you will love this salad.  It will be impressive at BBQ's.  It's the perfect summer food.

  1. Yay!!! This salad sounds great and I agree that those were some delicious cucumbers! I should have gotten more, hahah. We made a great summer pasta with our zucchini and squash that we also picked up from Hardin Farms, with a simple olive oil and fresh thyme "sauce." Super yums!
