Cookbook Creations: Pillow Pancakes



At the River Market last weekend, I saw a booth selling Arkansas blueberries and strawberries, so I bought a huge amount of each.  When I got home, Josh's eyes got wide, and he exclaimed, "CAN WE MAKE BERRY COMPOTE?!"  "Why of course, my love," I assured him.

So, the next morning, I woke up and washed a cup of strawberries and a cup of blueberries, then I added them to a bowl with zest from 1 lemon, juice from that lemon, and a tablespoon of sugar.  We let them sit on the counter, releasing their sweet juice, while we tried to decide what we should put them on.

I reached for Isa Does It to create the waffles from our waffle taco morning, when I saw this picture.


Just look at those pillow pancakes!  I knew that's what we had to have.  The recipe is similar to this one on the PPK.  They were so simple to make, and they really delivered on the fluffy factor!




To go along with our pancakes, I smashed up some local pecans and washed a few green grapes.  I love brunch.





The berry compote came out great, as usual.  It's so simple, but so delicious.


I love to make little pancakes, so I can arrange them and top them each with a ton of fruit.  These were perfect, fluffy and flavorful!





I gave them a hit of maple syrup for good measure, then I ate the whole plate.
