Pre-Travel Prep: Juicing!

What do all three of these amazing people have in common?  They'll all be spending a weekend with me in New York starting tomorrow!  David lives there, and Devon, Mel and I are traveling to the Big Apple to have some fun and eat some amazing food.  I haven't been since 2009, when I took these fun pics:

Yes, vegan food!  I was a baby vegan at the time, only having adopted the fully plant based lifestyle for about 6 months when I went.  This time, I'm going on 6 years, and I'm ready to eat as much vegan food as I possibly can.

Now, on to healthy food!  I'm leaving in the morning, but I had a wealth of veggies in the fridge that needed to be used.  So, I busted out the juicer and made dinner part 1.

Clean out the Fridge Juice

1 bunch celery
3 bunches romaine
1/2 cup cilantro, tightly packed
2 limes
1 lemon
2 cups carrots

Add to juicer and enjoy!

I know the color on this isn't great.  It was such a pretty, bright green until I added the carrots.  Oh well, those carrots needed to be eaten too!

So, I drank about half of the carafe and put the rest away for my breakfast.  A few hours later, I moved on to dinner number 2.

Pre-Flight Protein Smoothie

1 1/2 cup almond milk
2 scoops vanilla protein powder
1 tbs spirulina
1 tbs chia seeds
2 cups spinach
1 cup strawberries
1 cup ice

Blend and enjoy!

Easy Broccoli Pasta Dinner

Sometimes, a girl just needs a simple dinner.  When I want one, I usually reach for a jar of pasta sauce and some broccoli.  This time, I thought I would try out some gluten free pasta. It turned out great!

Easy Broccoli Pasta Dinner


1 box gluten free spirals
1 tbs olive oil
2 heads broccoli
1 red onion, diced
3 cloves garlic
1 cup lentils
3 cups vegetable stock
1 jar organic pasta sauce

  • Boil vegetable stock in a sauce pot and add lentils.
  • Cook for 20 minutes.
  • Drain and set aside.
  • Chop broccoli, garlic and red onions.
  • Heat a skillet on medium high heat.
  • Add olive oil.
  • Add broccoli, onions and garlic.
  • Cook for 20 minutes on medium heat.
  • Warm up pasta sauce in a sauce pan.
  • Cook pasta per box directions.
  • Assemble and eat!
  • Serve with a large dinner salad, if you like!

The gluten free pasta was really good.  I can't tell a difference between that and regular pasta.  I definitely think this will be an easy dinner item in our rotation.

Little Rock Movies in the Park

Sometimes this blog is a bit Little Rock specific, but I know I have a lot of readers from in town, and everyone else, I want you to know this southern city isn't all that bad.  It's pretty great, really.

One event I really enjoy everu summer is Movies in the Park.  Once a week during June and July, the First Security Amphitheater plays movies for free.  They have vendors selling food, plenty of seating, and a beautiful background.

Josh and I went to the first movie, Man of Steel, with our friend David.  Before we hit up the movie, we went to Gusano's to grab some dinner.  Josh wanted some deep dish pizza, and I wanted a huge salad.  Luckily, we found both.

We stopped at Whole Foods before dinner, and I grabbed some baked tofu to throw on my salad.  It was a filling and delicious dinner!   We loaded up our camping chairs and cooler and got a spot on the lawn.

Scenes of Summer

Saturday was the first day of summer, and instead of showing you any food pics, I thought I would show you where we spent all weekend.  Our back yard is my happy place, and although the deck needs work, I love it.  We got a few outdoor rugs this weekend, as well as a large awning (not pictured) that really helped make the space comfortable.

My mint came back again this year, but I'm not really tending to any other plants.  I have done such a poor job of making time for them in the past.  So, not doing a garden this year.  We have a lot of rouge mint growing in the back yard, though, so I have been harvesting that.

Who wants to come over for some vegan chicken salad and swimming?
