Weekly Recap: Sleepless Nights



As I'm sure most of you know, Central Arkansas got hit with an EF 4.0 tornado on Sunday night.  The storm hit west of us, but we spent the entire night watching storm coverage and hunkering down.  Josh is incredibly conscious of storms, and he set up a command center and safe room for us.  Luckily, we didn't need to use it.



Before the storms hit, I worked on a casserole from Isa Does It for our weeknight dinners.  I will have a complete review of the recipe tomorrow.  Just as I pulled it out of the oven, Josh told me to come outside.  We stood in the front yard and were amazed at how eerie the air felt.  Then, the sirens went off.  After the tornado cleared out of Arkansas, we were glued to the coverage until almost 1 am.  Josh woke up periodically all night to make sure another storm didn't arise.  So, needless to say, we were very tired Monday morning.








For my Monday smoothie, I had some fresh, Arkansas strawberries in my smoothie.  For lunch, my sister wanted to meet up, so we went to Panera.  I don't eat there often, but I enjoyed the half salad/half sandwich.  I ordered the Greek Salad, no dressing, and the Mediterranean sandwich, both without cheese.  I hit up hot yoga after work, and when I got home, I wanted something light.  So, I chowed down on some BBQ jackfruit and salad. Then, I went back to work (at home.)  We were on deadline all week, so that was the norm.  Work, workout, eat, work again.  It contributed to my lack of sleep all week.







Tuesday, I had more strawberries for breakfast and an amazing salad for lunch.  Sunday night, I also made up the Lighten Up Protein Power Bowl from the Oh She Glows cookbook.  You can also find the recipe here.  It was so wonderful, and it made a perfect salad to go with my greens and fruit smoothie.  Unfortunately, I didn't get in any morning workouts, due to lack of sleep, but I kept the lunch salads going.  Dinner was the yummy casserole I'm going to tell you all about tomorrow.  I also got in a nice 2 mile run with Josh.









Wednesday, the overworking and lack of sleep caught up with me.  To put a cherry on my stress cake, my smoothie was completely undrinkable.  I have been using a mix of greens instead of just spinach, and the arugula was so off putting that I couldn't finish my breakfast.  So, I ate my almonds and went to Trio's for lunch with my office.  There are not a lot of vegan options at Trios, but they have one vegetarian sandwich that can be made vegan, so that will work in a pinch.  After work, Josh and I had to run a bunch of errands, which actually put me in a much better mood.  It was also the end of the big work deadline, so we celebrated with some US Pizza.  I got the vegetable medley, much like my Crunk Lunch, and covered it with hummus.  Yum and yum.










Thursday, I broke my smoothie norm and had salad for breakfast!  I love salad for breakfast, and while I don't want to make it a daily thing, it was a nice break.  I treated myself to Whole Foods for lunch, and I made up a beautiful, spring salad.  After work, Josh and I got in another good run, and I'm feeling really happy to be back on the pavement.  For dinner, it was huge salad bowls and more delicious casserole.  We try to have a big bowl of salad with almost every dinner.  I always just lightly dress it with olive oil and lemon juice.





Friday, I had some really good smoothies, more protein salad and dinner at a local favorite, Izzy's.  I have eaten and written about Izzy's a lot in the past, but I'll have a more detailed write up this week.

The weekend was jam packed with friends, fitness and fun.  I'll have more about that coming up in the next few days, but my legs are sore.


I was down another pound this week, which is putting me just in reach of my lowest weight before I started to stall out.  I'm feeling happy and healthy, and I'm ready to have a fitness filled week, fueled by lots of yummy food.
