Oh. My. Waffle Tacos!

Taco bell recently came out with a breakfast line, and like a lot of times when a crazy non-vegan menu hits the collective consciousness, vegans everywhere try to recreate it.  I saw a picture my friend Sheridan posted of a breakfast taco made vegan, I knew I had to try it!  Bianca, on Vegan Crunk, recently posted her interpretation as well, so I know vegan waffle tacos are a must try!

For the waffle batter, I cracked open Isa Does It for the recipe.  They were light, well flavored and absolutely delicious.  Josh raved about how good the waffles were.  They made a great base for the taco.

For the scramble, I use my go-to recipe from the PPK.  I modified it slightly, using onions, garlic, tofu and greens.  The spice mix is the key.

I warmed up two of these breakfast patties to go inside as well.  I usually don't like fake meat products, but this waffle taco experiment is definitely a treat.  These patties had an off putting color, but they were very tasty.

All I have to say, is that this was as delicious as it looks.  With a drizzle of maple syrup on top, the salty and savory tofu scramble gets a hit of sweetness, and the flavors all come together to make one amazing brunch food.  This is definitely not for the faint of heart.  The was pretty much all I had to eat that day, but it didn't leave me unhappy or uncomfortably full.  It's a great mix of flavors and textures, and it's definitely worth a try.  Bring this to a brunch with your non-vegan friends, and they'd surely be impressed.

  2. Yay, waffle taco time!! I think homemade waffles are a better idea since they're bigger. My little frozen waffle didn't hold much. Also, I'm totes adding onions and stuff to my scramble next time. And maple syrup!

    1. the home made waffles soaked everything up and held together really well. omg. so tasty!

      also, maple syrup plus tofu scramble is AMAZING
