Making Meals with Friends


This past weekend, I was enjoying the beautiful, spring weather in Fayetteville.  It was a great weekend, filled with a beautiful trip to the market and lots of cooking with friends.  The meals we put together were easy, and everyone from the lone vegan to the meat eaters enjoyed them.




Devon's Low Carb Tofu Scramble

Ingredients:
2 packs firm tofu, drained and pressed
2 small yellow onions, chopped small
1 1/2 cups radishes, diced small
3 cups kale, loosely chopped
1 green bell pepper, de-seeded and diced
2 tsp garlic powder
1 tbs cumin
1 tbs tumeric
1 tbs dried thyme
1 tsp paprika
1 tsp sea salt
a few cracks of ground pepper
1/2 cup water


  • Heat a large pan on the range at medium/high heat.
  • Press the tofu for 10-15 minutes in a clean dish towel.
  • Oil your pan (we used spray).
  • Add onions and saute for 5 minutes.
  • Add radishes and bell pepper.  Saute for another 3 minutes.
  • Add spices and water to pan.  Cook down 3 minutes.
  • Add tofu and kale to the pan.  Stir in to mix spices.
  • Cook down in the pan on low for 20 minutes.
  • Serve plain, with salsa, or wrapped up in a low carb tortilla.







Saturday, our friend Jen had us over to her beautiful house for a bbq.  We got to play with her adorable daughters, and she made us a FEAST.  Jen is a vegetarian, so I knew she'd have me covered.




She started us off with a huge plate of raw veggies that had to be refilled twice.  We munched on those with hummus and some home made guacamole.  It was fresh, lemony and delicious!


For dinner, we had asparagus from the Farmer's Market, steamed on the grill with onions, mushrooms and tons of garlic.  We also had pan roasted potatoes and veggie burgers.  Yum and yum!

I love when the weather gets nice, and you can grill out with your friends.
