Cookbook Creations: Nirvana Enchilada Casserole

I am loving Isa Does It.  The cookbook is beautiful, and as I was flipping through all of the recipes, the Nirvana Enchilada Casserole stuck out.  It looked delicious and hearty, and I knew it would make enough for leftovers.  So, Sunday night, I made it up.  Then, we had it several times throughout the week.

First, I have never made home made enchilada sauce before, but I will be breaking out this cookbook to make it a lot more.  It's flavorful without being overly sugary and heavy like canned sauce.

The recipe seems like it has a lot of steps, but Isa tells you how to schedule it so it's not overwhelming.  I had an easy time following everything, and it came together well.

I love any recipe that says cover in pumpkin seeds and cilantro. Oh. my. gawd.  Yum!

I served up this casserole all week with a huge dinner salad.  That's kind of the norm for us every week.  You can make up yours with any kind of veggies you like!

I thought this recipe was a knock out.  It got a "good" rating from Josh, but his criticism was that the casserole got dry once it had been in the fridge.  The corn tortillas really soak up the sauce, so if you have time to make extra, that would really help the dish.  I also think that layering the cashew cream inside instead of just on top would make this ever more delicious!

  1. This looks really tasty! I definitely need to add it to my "to-make" list! Sadly, we didn't end up doing anything for Cinco de Mayo. I had a bit of an allergy attack after our Pinnacle climb, hurumph, and still felt pretty yucky yesterday. But, my head seems to be clearing today. Yay!

  2. I'm just getting caught up on your blog bc things have been crazy at work and my internet is down at home. So I just saw your post about our hangout time!! Yay!!!! It was so cool meeting you (and I left more of a comment on that post too just now). But also wanna say that Isa Does It is AWESOME!!!! I haven't noticed this casserole yet, but now I must make it. That white sauce looks delicious!
