Cookbook Creation: Mushroom Banh Mi




I am still loving my copy of Isa Does It, and the most recent recipe we made was no different.  Last week, we flipped open the pages to see the Shiitake Banh Mi's, and I knew I had to make it.  I'm trying to avoid too many breads at dinner, so I opted to have mine on a large cabbage leaf.  It was good, but I think the bread would be better, so, if you're not trying to shed some weight, go grab a loaf.

I found this recipe for a Shiitake Banh Mi Salad on the PPK, and it's almost exactly what ends up in the book, so you could go by that if you want to re-create it.  You could also go snag Isa Does It, because it's great.






Doesn't that look yummy?  I told Josh that I think banh mi's will become a staple in our house.  I fell in love with the sandwich the first time I went to Pho Vietnam in Fort Smith.  If you are ever in that area, it's a must try.



These are filling on their own, especially if you make them with bread.  They're also great with another recipe from Isa Does It, which I will tell you about soon!

Have you ever tried shiitake banh mi's, or do you always reach for tofu?

  1. YUMMY!!! Have you had the spicy tofu banh mi sandwich at The Root? That's one of my favorite sandwiches in town. But yeah, the bread can be really filling. They will make it as a salad too if you ask - super delicious!
