Cookbook Creation and Bonus Grilled Cheese

The Oh She Glows Cookbook is beautiful!  It's also jam packed with delicious, healthy recipes.  I knew when I flipped to the Cream of Tomato soup page, I had to make the recipe.  So, what goes better than anything with tomato soup, yep, grilled cheese!

First, let's talk about this beautiful soup.  You can see an authorized reprint of the recipe here.  The roasted chickpea croutons are so flavorful.  They're like little salty accents of happiness, sitting on top of your soup.  The cashews are the key to the creaminess in this soup.  Plus, it's super simple to make.  This could be whipped up easily on any week night.

Ok, let's talk grilled cheese.  Being vegan definitely doesn't mean we have to miss out on these babies.  There are so many great products out there.  Feel free to mix and combine as your heart desires.

Avocado Roasted Jalapeno Grilled Cheese

2 slices sprouted grain bread
1 tbs tofutti cream cheese
2 slices daiya cheese slices, provolone 
1 jalapeno
1/3 avocado, sliced
2 tsp Earth Balance Vegan Spread

  • If you keep your bread in the freezer, take out two slices and pop in the toaster.
  • Heat your oven to 450 degrees (F).  Add jalapeno on baking dish and roast for 15 minutes.
  • Let cool, then carefully peel and de-seed.  Slice roasted pepper.
  • Assemble!  Put cream cheese on one side of the bread and daiya slices on both sides.
  • Layer in roasted jalapeno and avocado.
  • Heat a pan on the stove to medium/high heat.
  • Close the sandwich and butter the outsides.
  • Place in the hot pan and let cook for 3 minutes.  Check for browning.
  • Flip and cook another 3 minutes on the other side, being cautious not to burn.
  • Once cheese is melted, remove and slice in half.
  • Dip in your soup!!

This sandwich is so flavorful, just a little bit spicy and all delicious!  I kept dipping it in my soup, which was very tasty.  All together, this is a hearty dinner.  Perfect for a cold night or cool spring day.
